Insurance took months. Once settled, fuel costs fell enough to keep sandwich loaves under a working lunch budget.

Neighbors barely notice the arrangement — except that bread stays on shelves through Thursday instead of selling out by Tuesday noon.

Apprentices rotate between teams, learning three house styles in one season. Owners call it survival. Staff call it school.

City economic offices now cite the charter when advising other night trades that share expensive equipment.
